HACCP & documentation

HACCP in the Czech Republic

A practical overview: who needs HACCP, what the documentation typically includes, and how implementation works in real operations. Designed for hospitality, catering, bakeries and food production.

What is HACCP

HACCP is a food safety management system that identifies and controls hazards in your operation. In practice, it sets procedures, control points, limits and records so risks are prevented — and you can demonstrate compliance during inspections.

Who needs HACCP in the Czech Republic

Typically anyone who produces, prepares, packs, stores or sells food (restaurants, cafés, bakeries, food production, catering, retail). The scope of documentation depends on the operation and its risk level.

The most common issue is not “having something on paper” — it’s documentation that doesn’t match real workflows and shifts.

What the documentation usually includes

  • Hazard analysis (biological / chemical / physical) + preventive measures
  • Cleaning & sanitation plan (what, how, frequency, responsibility, and verification)
  • Control points / CCP where relevant, including critical limits
  • Records (temperatures, receiving, storage, allergens, traceability — based on your operation)

How implementation works (in practice)

HACCP FAQ

What is HACCP?
HACCP (Hazard Analysis and Critical Control Points) is a food safety management system that identifies and controls hazards in a food operation. In practice, it sets procedures, control points, limits and records to prevent risks and demonstrate compliance during inspections.
Who needs HACCP in the Czech Republic?
Any operation that produces, prepares, packages, stores or sells food — restaurants, cafes, bakeries, food manufacturers, caterers and retailers. The obligation follows from EU Regulation 852/2004 and applies to all food business operators in the Czech Republic.
What does HACCP documentation include?
Standard documentation includes hazard analysis, identification of Critical Control Points (CCPs), critical limits, monitoring procedures, corrective actions and control records. A sanitation plan and staff training records are also part of the system.
How does HACCP implementation work in practice?
SafeFood first audits the operation, identifies hazards and critical points, prepares documentation tailored to the operation, trains staff and conducts an internal audit. The entire process typically takes 1–3 weeks depending on the complexity of the operation.
How often should HACCP be reviewed?
HACCP must be reviewed whenever there is a change in the production process, menu, staff or premises. An annual internal audit is also recommended to ensure the documentation reflects the actual state of the operation.
